Trout with sour pomegranate “caviar”


We will need (for two persons):

  • 2 trouts.
  • 2 sour pomegranates.
  • 1 Lemon.
  • Parsley.
  • Extra virgin olive oil.
  • Salt.


First we wash, clean and salt the trouts.
If we are not familiar with cleaning the fish there is no problem. We can ask from the store where you bought them to clean them for us. It is most likely that they provide this service.

Then we place them on the grill at 180 οC. We will cook them for about 15 minutes on one side and 15 minutes on the other.

The next step we take, until our fishes are cooked, is to separate and collect the pomegranate seeds in a pan.

We then put halve of the grains in the blender and mash them. After that we strain the pulp to keep only the juice.

We have kept the rest of the pomegranate grain aside.

The last two steps to finish our preparations are to chop the parsley and
cut lemon slices.

By now our trouts must be ready.
So we remove them from the oven and place each one of them on a large plate of our choice.

For this particular reason, i have bought plates in the shape of a fish, they are very impressive and creating a very gourmet atmosphere on the table.

We proceed with our final setup which is first to sprinkle the fishes with a little extra virgin olive oil.
After that to pour over the sour pomegranate juice.
Then to place the remaining pomegranate seeds that we have kept on the side of the abdomen, as well as inside the abdomen as if it was a type of “caviar”.
We sprinkle the plates with the chopped parsley and finally, we complete the decoration of our plate with the lemon slices.

The dish is ready for us to enjoy it!!!
